SMOKE LABEL ROUGE
For our Label Rouge Scottish smoked salmon, we use a strictly controlled farmed salmon of the highest quality and taste. We process around two tonnes of salmon per year. Our chef Cyrill Pflugi was able to learn the smoking craft in Scotland during his years of travelling. Before smoking, the salmon sides are marinated in a secret marinade consisting of 13 herbs. The most important thing is the regular checks during the 12-hour smoking process. The smoke must not be too hot to prevent a cooking process and to avoid bitter substances in the smoked salmon.
Take a bite (or two) of Hof Maran home with you:
In one piece for CHF 8.50/100g or
cut for CHF 9.40/100g
The regional newspaper for the municipalities of Arosa and Tschiertschen-Praden. The editorial office is based in Arosa and reports on local and regional stories from politics, business, culture and sport. The Arosa Zeitung was first published in 1910.
